TO ALL DIETERS IN CALIFORNIA:
AN ENTIRE BOILED, PORK BELLY CAN HAVE THREE CYCLES OF HIGH BOILING FOR 30 MINUTES. EACH TIME, COMPLETELY TRANSFER THE PORK TO A COLANDER WITH FEET INTO ANOTHER POT. THEN, SWITCH TO A CLEAN POT WITH FRESH WATER, FOR REBOILING IT. AFTER THE THIRD TIME OF TRANSFERRING THE PORK BELLY, CHOP IT UP INTO 2-INCH CUBES, THEN BOIL IT FOR TWO MORE HOURS, ON HIGH BOIL, IN THAI BASIL, LEMONGRASS, LIME AND COCONUT SOUP. PORK IS VERY UNSAFE TO EAT, AND PORK BELLY IS VERY HIGH IN CHOLESTEROL. THE FAT-FREE, COCONUT CREAM POWDER IS BEST FOR THIS RECIPE.
