For 2 adults:
2 cups organic chestnut flour
4 large, organic, Irish-buttered eggs, from previous blog posting, beaten up
4 TBL melted, unsalted Irish butter
Reserve an extra 1 cup of unsalted, Irish butter, melted or chopped into 1/4-inches for cooking the pancakes
1/2 tsp salt
***Season each of the cooked pancakes with a large, 4 TBL dollop of organic creme fraiche, a TBL of freshly-squeezed Meyer lemon juice and a light sprinkle (2 tsp) of organic stevia powder.
