The fresh pineapple has to be the ultrasweet variety, core and skins removed completely. After cutting it into 2 inch cubes, soak it overnight in Mexican coconut soda, covered in fridge, before grilling (with halved strawberries, cantaloupes cubes, fresh guavas, Asian pear slices, starfruit slices) and eating it. For some reason, I find it more comforting if Mexican coconut soda has been added to every meal in the food and beverages. Coconut juices, young coconut cream, powdered coconut for curries, and dried, candied coconut candies, coconut oils are excellent for cooking.
