University Campus or Military Base Safety

1. Walk and travel in groups of four, including parking lots, especially at nights/evening classes.

2. Walk around your vehicle, checking inside, before getting into your car.

3. Be careful of getting into cabs, or taxis, especially alone and female. Some unsavory characters may impersonate licensed, background-checked, legitimate taxi companies.

4. Wear clothing, shoes, watches and jewelry that look very inexpensive, and keep $50 cash, in case of a mugging.

5. Try your hardest not to be taken from your location, against your will.

6. Don't look like a tourist. If you're military, try your best to avoid looking like you're in the military, especially during travel between duty stations, or on leave.

7. Have assertive mannerisms.

8. If you can, avoid dark alleyways.

9. Notice people behind or around you, especially on public transport.

10. Don't wear long ponytails, or earphones for music, if walking or running outside. Criminals often grab long ponytails and attempt a headlock position from behind, with female victims. They tend to look for small, female victims with long ponytails, who aren't aware of their surroundings, or listening to music with headphones or ear buds at bus stops.

11. If female, consider getting a membership to a women's-only gym, e.g. Curves. That's safer than walking or running outside.

12. Let everyone around you know where you are going and only meet up with friends, study partners, acquaintances or first dates in well-lit, public places, such as a cafe, art gallery or gym.

13. Ask questions about strange license plates, and keep track of the normal vehicles' license plates and descriptions that are parked in your residential area.

14. If you're breaking up or distancing yourself from someone, don't do it in person. Let them know over the phone.

15. If ordering any beverages, only ask for ones that are unopened, e.g. a bottle of Perrier, and open it yourself. This prevents roofies from being slipped into your beverage. Never leave your beverage unattended.

16. Deadbolt and chain your bedroom door and window(s).

17. Install exterior, doorway, wireless security cameras.

18. Install bright, doorway entrance and window entrance lights in your residential area/campus bedroom.

19. Avoid all people who drink alcohol excessively, are known to frequently break rules, or lie to others or those who do any recreational drugs. Never let them be alone with you or drive you anywhere.

20. Avoid meeting friends in places where drinking alcohol or drug use/dealing is more common, e.g. dance clubs or seedy bars. Locations with a lot of bail bonds offices, dance clubs or pawn shops are often unsafe.

Suggest meeting your friends in other places, only during daylight hours, that are healthier, safer and more wholesome. Look for places where young children and families are frequently welcomed, and go there instead.

21. Find only a rental apartment or condo near your university or military base with gated, locked/controlled access and 24/7, armed, private security guards. Check it at night to see how well-lit and safe it looks during that time.

Don't rent there if you see graffiti, drug paraphernalia, drug users, or unsavory characters lurking around the property, especially at night. You should routinely see at least two security guards, everyday, near your controlled access, well-lit, rental apartment/condo.

Check online for registered sex offenders in that area, and ask the neighbors, in person, if there are any safety issues or loud parties there, prior to renting the condo/apartment, especially overseas.

22. In Denver Metro, if female, consider the Women's College at DU, or CTU in Westminster. Those two have very safe campuses. Rent near the Women's College at DU is typically at least $1,500/two bedroom, two bathroom apartment in a safer neighborhood. Near CTU in Westminster, a safer apartment is typically at least $1,300 for a two bedroom, two bathroom.

In other states, or countries, look for all-female universities, with safe-looking, well-lit parking garages or parking lots. Don't rent with mixed gender, or co-ed roommates. Always try to avoid having roommates/housemates, if at all possible. They may not pay rent on time, or invite their criminal friends over to destroy the property, endangering your well-being, and leaving you in a financial bind.

Run a background check and require drug testing, plus a current, valid driver's license with a clean driving record if you do rent a condo, house or apartment with a roommate, even if they're a friend/shipmate/someone with a Top Secret clearance.

There are professional background checking and drug-testing companies in most cities. If they have any criminal misdemeanors or felonies on their record, avoid renting with or to them.

23. In and around the Top Secret U.S. military bases and commands, remember, there are international drug cartels, neonazis, skinheads, white supremacists, gang members, rapists, addicts and even terrorists. Never just trust people, even if they're allowed access to Top Secret, U.S. military data and bases. Some U.S. military chaplains and military, or VA healthcare providers or subcontractors are criminals or sex offenders also.

Some unsavory characters, veterans and/or non-veterans, even those who are in a position of trust, or are healthcare providers, will even specifically prey upon, scam, abuse, sexually assault, impersonate and/or criminally stalk military veterans, especially the disabled, female ones, and their families.

Keeping Cool & Safe in Subtropics or Summertime

Budget-friendly ways of keeping the home cool in the subtropics or summertime:

Dehumidifying closet hangers from Walmart, laundry section (2 per closet, changed every month)

Dehumidifying or moisture control kits from dollar stores (2 per room, changed every month)

Install ceiling fans, the energy saver awarded ones

Portable, rotating fans (one per room, placed/mounted at adult face level, standing)

Install insulated, long, heavy drapes
(For children's rooms, get two, full-sized, favorite, heavy comforter/quilts turned into hanging bedroom curtains, at your seamstress/tailor shop) for all windows

Plant native, drought-friendly, hardwood trees on the southside/sunniest areas of the house

Plant tall and wide, drought-tolerant, evergreen shrubs or trees alongside your fencing, and driveway

Consider installing a large, neutral, light beige, UPF 50+ patio shade in your backyard

Paint the house a light, neutral color (e.g. light khaki) to deflect the sunlight

Install lockable, burglar-proofed, double-paned, storm/second doors and energy-efficient, double-paned windows. Check the metro area's Habitat for Humanity shops and craigslist for discounted items, as some are in brand-new condition.

Close the fireplace or woodstove chimney openings in the summer and springtime

Install windowsill, air conditioning units
***Sears has a good selection on a budget, but make sure it's securely anchored, or stabilized/well-bolted in the window frames, plus break-and-enter, or burglar-proofed, especially in the higher-crime cities or college campuses. Hire a carpenter to install it for you.

For the automobiles:

-Flush and refill the radiator, according to manufacturer's recommendations, at your mechanic's shop

-Check your A/C belt and pulley system, at your mechanic's shop

-Install UVA/UVB protection shades onto your back, side windows, available at Babies R Us

-Get UVA/UVB, lightly-tinted auto glass installed (check Groupons and Living Social for discounts)

Get an umbrella stroller and install a portable A/C unit. Retrofit, or attach light-colored, UPF 50+ umbrella shades to all the strollers and car seats.

Install UPF 50+ window and doorway shades onto the house exteriors, with a professional carpenter

Increase the rooftop and siding insulation of the house. Look for fire-proof, sound-proof insulation panels made from recycled glass bottles.

Always stock the daycare bag, and your kitchen pantry with infant Pedialyte liquid, and freezer popsicles for children under five years of age. For infants, mix their infant formula with the clear Pedialyte at the first sign of dehydration, diarrhea or vomiting.

To check for infant and toddler dehydration,  clean your hands with antibacterial handsoap. Then, use your fingertip to touch their inside cheek. It shouldn't be tacky, sticky, glue-y, or dry feeling.

Check their fontanel, or top center of their heads. It shouldn't be sunken in, or flat-looking. This should be checked everyday, three times a day, no matter what the weather. Avoid exposing infants and toddlers to direct sunlight or heat for extended times.

Consider roofed, indoor water parks or recreation centers with adequate lifeguards over outdoor ones. Get bright red, glow-in-the-dark, GPS-tracking, life vests for all passengers, if canoeing, white-water rafting, boating, sea/river/stream/pond fishing or for sailing. Go with professional outdoor guides, especially with children.

For small, autistic, elderly or challenged individuals of all ages, have a GPS-tracking, bright red, glow-in-the-dark wristband and matching, GPS-tracking anklet with contact information on them, because they tend to hide or run away from rescuers, if they're lost hiking or camping.

At home, even while supervised, young toddlers, young children, the challenged, autistic and elderly may unlock and slip out of the house. Hire two, over age 18, CPR and First Aid-certified, mother's helpers and a registered nurse caregiver for them, during times when you run errands, have medical appointments or need a break.

Buy UPF 50+, light-colored, brimmed, infant and children's hats from REI that includes back of the neck protection, on top of a physical sunblock, SPF 45+, zinc oxide, for sensitive skin

Put zinc oxide SPF 45+ physical sunblock lotions, sprays and sticks at every doorway. Apply it 25 minutes prior to sun exposure and reapply it every three hours. This is necessary at high-altitude, year-round, even on cloudy or overcast days. Image brand, Matte, for oily skin sunblocks with 45% micronized zinc oxide from spa/esthecian's shops works well.

Use SPF 35+ chapsticks around the eye areas. Those don't tend to run into the eyes, causing irritation or stinging. Use a separate one for mouths. Keep a sunblock reapplication kit in all daycare bags and all automobiles.

Get any under age five year-old kids' sunburns checked by a pediatrician.

Check all infants and toddlers' ear temperature during summertime excursions. If their eyes look glassy, fontenels appear flatter than normal, or they're acting lethargic, get them to a pediatrician right away.

Invest in a good cellular coverage plan, with young child-friendly cellphones.

Also, invest in two or three sets of walkie talkies, that are: shock-proof, water-proof and can clearly tune in, within a seven mile radius. Train all your children and all hired help, caregivers to use them. Best Buy carries a good selection.

Invest in both automotive and camping cell phone chargers. Also, carry a self-charging, car, van, SUV or truck battery charger for all automobiles in your trunk. Keep a high-quality, spare tire pre-mounted onto a steel rim, adequate for all weather conditions with the right tire pressure.

Have a cellphone with car charger, GPS mapping unit, hardcopy local maps, a few battery-operated, adjustable, bright, headlamp lights, a funnel, engine oil, windhield washer fluid, a jack, tool kit, reflective vest and emergency flat tire changing kit in the trunk.

For three and four year-olds, teach them their phone numbers to the tune of Jingle Bells.

Keep fun art and activity books, portable talking toys, comfort items, a complete change of clothing, three sports bottles, each a liter-sized of electrolyte Smart Water, an extra winter coat, a large/economy-sized refill bag of sensitive skin, Huggies baby wipes, plus a gallon Tupperware container of whole-grain Cheerios in the automobile for all children under age twelve. This helps if anyone gets fussy, vomits or spills anything.

We'll need the Colorado governor to acquire  the federal funding to provide legal representation and bilingual, compassionate, inclusive, feminist translators for all of the victims especially. They'll need to be provided free of charge to the courts and victims.

Minimally, three teams of two bilingual translators are required: two per civil and criminal courts, two for the victim, and two for the defendant. At least six translators are required per court system, for the criminal and civil cases.

The sales tax profit from Colorado's medical marijuana clinics must be used for addressing Colorado's international drug cartels. They continually manage to illegally harvest and traffic human organs for the black market here. This isn't about marijuana, but about elderly genocide in Colorado by these drug cartels.

Too many elderly in Colorado have mysteriously died without reasonable explanation or independent autopsies, to aid investigators in stemming the flow of illegally-obtained human organs, and tissues to the international black market.

Kindergarten Writing Practice Tips

It's normally quite challenging for most Kindergartners, especially boys, to differentiate their lower-case "p," "b," "g" and "q's" while learning how to write.

For boys, their fine motor skills development may not match the girls in their class. This is perfectly normal also. Let them get their wiggles out and play for an hour after school. They need time to decompress.

Organize an Easter egg hunt, by hiding little toys inside of reusable, plastic Easter eggs around the home, and yard for them to find.

Then, make sure to give them an early, balanced supper, especially at high-altitude. Afterwards, give them assorted, scented medium-point, non-toxic, Crayola markers. Use the washable types.

Ask them to practice writing those letters with you, on a sliding-glass door or large window panes.  Get a ruler to draw wide-ruled, double lines for them, with a center dotted line. It should be two inches wide, from top to bottom. Write three examples of those letters yourself, in front of them.

Remember, take it only one lower-case letter at a time, describing to them slowly and patiently where to start the letter, and describing how to form it. Put a smile on your face and sound kind, cheerful and confident. Think of an indulgent grandmother, and try to be similar to one during this writing practice.

Next, hold their dominant writing hand and help them write it together with you three more times. Then trace that letter three more times for them to fill in at their pace. Reward them with praise, hugs and a small, stevia-sweetened treat.

In order to help them learn how to write those challenging lower-case letters, it just takes daily time and practice. Try to hire an experienced, patient tutor for them, if you don't have the time, so they can practice those lower-case letters everyday, for at least fifteen minutes. Each child is their own unique individual, with their own pace for developing attention span and fine motor skills.

Their private tutor should be a former primary school headmaster/principal, with at least twenty years experience in your school community, and be of your child's gender, ideally. He/she should know about developmental differences between genders and have realistic, empathetic expectations.

Another possibility is to stitch white burlap with black yarn. Use the child-friendly, plastic needles, from online educational catalogs.

Other activities that may help them, is forming the letters from:

Moldable, wax wikki sticks

Fuzzy, colorful, craft pipe cleaners

Dyed macaroni noodles to glue into a stenciled letter that you outline for them

Or, to help them in general:

Fine motor skills activities such as private piano lessons for three years, once a week for an hour with thirty minutes of practice everyday

Cutting out old National Geographic Kids magazines and making collages

Glitter glueing stenciled letters

Glow-in-the-dark painting

Coloring books

Sticker books

Martial arts, such as karate








Downeast Maine Pak Choi & Fresh Shiitake Warm Salad/Stir-fry Ingredients

Serves 8

4 pounds organic pak choi, fresh, triple-washed, cut into 1 and a half inch pieces, added to the wok in the last two minutes of medium-high cooking

2 cups organic, oven-roasted, red shallots, finely-minced, add this at the end, after cooking, for texture, color, and scent

4 cups organic, fresh shiitake mushrooms, washed, then chopped into fourths (each piece having a bit of its caps on), add this to the wok fourth, after the oyster mushrooms

4 cups organic, fresh oyster mushrooms, washed, then chopped into 2-inch pieces, add this to the wok right after the ginger, or third

4 cups organic pineapple tidbits, drained, then rinsed, without any sweeteners, adde in last 5 minutes of cooking, as it contains sugars (fructose), that can cause the other foods to burn

3 cups organic, fresh ginger root puree, added right after the sesame oil, stir constantly with the mushrooms, to prevent it from sticking or burning

2 cup organic, reduced-sodium tamari sauce, added in the last three minutes of cooking (the salt and sugars in it will burn the food otherwise)

4 organic, fresh, red, Thai chili peppers, washed, stems removed, finely-minced

8 TBL organic garlic powder, add this in the last 5 minutes of cooking time

8 TBL organic cardamom powder, add this in the last five minutes of cooking time

3 cups organic sesame oil, dark, added first to the wok, on medium-high heat, then wait 1 full minute, so the oil heats up, before adding other ingredients to it

For presentation, or visual appeal, cut cleaned, organic, Hawaiian, small pineapples in half, lengthwise, with the tops still on.

Dry the pineapples well, as they can be slippery to cut. An electric knife works best, as it cuts more precisely for this.

Then, remove interior flesh from the pineapple halves. Keep one full inch of pineapple flesh still attached to the skin.

Finally, use a large, slotted ladle to place the warm salad inside the pineapple skins.




High-Altitude Japanese Grilled Mackerel Fish Fillets & Sushi Brown Rice Bowl

Here's a Japanese Grilled Mackerel Fillet & Sushi Brown Rice Recipe for 7,500 feet above sea level/high-altitude. It's for two primary school-aged, young children's servings.

Sushi Brown Rice, steamed with 2 TBL organic dulse (from Maine) per 4 cups uncooked, brown rice grains. At 7,500 feet above sea level, high altitude, use one and a half times more water than amount/proportion of uncooked rice grains.

Sushi Brown Rice Recipe:

Ingredients:

4 cups organic, brown sushi rice grains, uncooked, rinsed and drained three times in warm water

6 cups water, plus 14 TBL water for the added ingredients below

2 TBL organic, dried dulse, finely-minced

4 TBL organic, beige sesame seeds

4 TBL organic, black sesame seeds

4 TBL organic, roasted seaweed paper, finely-crushed

Directions:

Stir the rice after steaming and then evenly spread it out in a deep-dish lasagna glassware pan, while fanning the rice for 3 minutes.

Clean your wide, organic bamboo or plastic rice fan completely  with 2 Clorox wet wipes and rinse it twice in cold water, then dry it well, prior to fanning the sushi rice with it.

Add 2 cups of cold, chilled, organic sushi rice dressing to it. Stir the rice again.

Add 1 cup of cold, chilled, organic rice wine vinegar to the rice evenly. Then stir it again.

Mackerel Fillets Recipe:

4 QTY sashimi-grade, fresh, cleaned, de-scaled, Mackerel fillets, boneless, skin-on, each fillet cut rectangular, 3-inches wide, by 5-inches long, by 1-inch deep/thick in size

Always try to buy sashimi-grade, if purchasing raw fish, and pack it with 4 one-pound bags of frozen veggies, per pound of fish, to bring it home. This reduces the risk of foodbourne parasitic infections and spoilage, while in transit. Grocery shop at non-traffic jam times also.

Directions:

Marinate fish fillets in the fridge, in an airtight Tupperware container, for 24-hours in:

2 cups Meyer Lemon Teriyaki Marinade/Dressing from a previous recipe blog posting

Plus, whisk into it:

1 tsp organic wasabi powder
2 tsp dark soy sauce
1 tsp organic ginger root puree

To grill the pre-marinated fish fillets:

After marinating the fillets, quickly and completely wrap them in organic ti leaves, or organic, young, banana leaves. Tie the parcels closed with blanched scallions/green onions.

Then, grill the wrapped fillets on medium heat, 7 to 9 minutes per side, approximately.

Use a meat thermometer to check the middle of each fish fillet's temperature, as a grill tends to cook less evenly than an oven. Use a separate platter for cooked fillets than raw ones.

For garnishing, place each fillet on a bed of 2 cups of finely-grated/angel-hair, fresh, organic carrots, or overtop spaghetti squash, organic, raw, triple-washed.

Put the finished sush rice, tightly-packed, into a 2 cup flower-shaped mold (rose blossom, misted with organic sesame oil, dark).

Flip it over, onto the plate, to place the blossom-shaped rice.

Finally, sprinkle 1/3 cup of organic, triple-rinsed, fresh rose petals over top the rice.

***Another alternative is to coarsely-grind the mackerel, after marinating it. Then, stuff it into round, 4-inch long, organic aubergines, or eggplants, to deep-fry.

First, wash and rinse the raw, organic aubergines.

Then, cut four slits all the way down to the joint/attached stems of each aubergine. Keep the stems on, to hold it together.

Next, soak them in cold, lightly-salted milk, in the fridge for two hours. This makes them less bitter.

Drain and dry them off with disposable, organic, unbleached paper towels.

Stuff them with the ground fish, then roll each stuffed aubergine into eggwash, and then, into a bowl of organic, beige sesame seeds.

To cook the stuffed aubergines:

Deep-fry each at 385°F, for 4 minutes each.

Then, drain them on a cookie sheet, triple-lined with organic, unbleached paper towels.






Downeast Maine Bengali Panch Phoron/Bangladeshi Five-Spice Blend

Ingredients:

1 cup organic cumin seeds, fair-wage from India

1 cup organic fenugreek seeds, fair-wage from India

1 cup organic fennel seeds, fair-wage from India

1 cup organic nigella/kalonji seeds, fair-wage from India

1 cup organic mustard seeds, fair-wage from India

2 cups organic, melted ghee

2 cups organic, food-grade, natural, vitamin E oil, as a preservative

Directions:

Set the ghee and vitamin E oil aside. Finely grind the rest to a powder, stirring twice with a whisk. Then, add the spices, ghee and vitamin E oil into a blender. Blend everything on high fir two minutes. Finally, store it in a refrigerated, dated, labeled, airtight container or freezer Ziploc bag.

Downeast Maine Indian Garam Masala Recipe

Ingredients:

5 TBL organic clove powder, fair-wage from India

100 organic, fresh, large cardamom pods, use the seeds only, fair-wage from India

20 organic cassia/bay leaves, fair-wage from India, chopped into quarters

10 TBL organic cumin seeds, fair-wage from India

5 TBL organic, freshly- and finely-ground black pepper

20 TBL organic, cinnamon powder, fair-wage from South Vietnam

20 organic nutmegs, freshly- and finely-grated

2 cups organic, melted ghee, fair-wage, halal

2 cups organic, food-grade, natural vitamin E oil, as a natural food preservative

Directions:

Put everything, excluding the ghee and vitamin E oil, into a spice mill, or coffee bean grinder, on espresso/finest grind setting, or food processor, or mortar and pestle. Then, grind it finely. Next, put it into the blender with the ghee and food-grade, organic, natural vitamin E oil. Blend it for two minutes on high speed. Store it in the fridge, in an airtight container, or a freezer Ziploc, dated and labeled.

One day, I dream of an America where our wonderful First Lady, Michelle Obama can be President and Commander-in-Chief of the United States. Martin Luther King, Jr, Maya Angelou and Nelson Mandela would want us to achieve this dream for our precious, oppressed, disenfranchised daughters.

We must take immediate action to overturn ALL Jim Crow laws, even federal rulings passed by Caucasian, racist, corrupt, U.S. Supreme Court Chief Justices of the U.S. Supreme Court. Who is in the right, the wealthy, high-ranking, Caucasian, patriarchal bullies or the innocent, born into poverty, through no fault of their own? This is about morality, not wealth or namesake privileges.

Recipe:

Alternatively referred to as Rasgullas, these are a Bengali dessert of chenna milk dough balls, simmered in a milky, rosewater syrup, sweetened with stevia. It's similar to Japanese, or Corean mochi dessert balls.

It can be filled with anything that mochi desserts are filled with also. Here it's filled with coarsely-ground, Southern-spiced pecans. You can also use a favorite, Greek baklava nut filling.

Syrup:

8 and a half cups organic stevia powder

1 cup organic, pasteurized, non-fat, evaporated, condensed milk, tinned, UHT, unsweetened

3 litres/12 cups cold water

1/4 cup organic, food-grade, rosewater (to be added at the end)

Chenna Milk Balls:

Use an ice cream scooper (small-sized) or melon baller (large-sized), to form uniform, golf ball-sized dough balls.

To make the chenna balls, first we'll make Indian cheese, or Paneer, from scratch. Then, we'll blend it with flour and stevia powder.

To fill each pre-formed chenna ball, we'll use our thumb to create a dent in the top center of each ball.

Then, we'll fill each dent with 2 teaspoons of the coarsely-ground, Southern-spiced pecans or your favorite Greek baklava nut filling.

Next, we'll re-mold it into a ball by lightly rolling it, then shaping it again with the large melon baller or small ice cream scooper.

For two pounds, 8 ounces of chenna dough:

Paneer:

20 cups organic, pasteurized, whole milk

4 cups organic, pasteurized, plain, non-fat, Greek yogurt

12 TBL organic, fresh, Meyer lemon juice

Chenna:

Paneer blended with:

2 tsp organic stevia powder

2 tsp organic chestnut flour

***Directions for the Indian cheese, or Paneer, Chenna and Syrup will be added in a few days.***






Downeast Maine Masala Chai

Serves 12 adults

3 TBL organic, fresh, ginger root, peeled, washed, freshly pureed, then oven-roasted for 2 minutes on low broil, in the oven, top rack
(Stir it after 1 minute, or halfway through the roasting time).

4 TBL organic, South Vietnamese cinnamon powder, fair-wage

8 tsp organic black pepper, freshly- and finely-ground

2 tsp organic clove powder

3 tsp organic cardamom powder

2 TBL organic British tea, black, Earl Grey, orange pekoe, fair-wage

3 cups organic, pasteurized, non-fat/skim, evaporated, condensed, unsweetened cows' milk, UHT, tinned, cold, donated on a weekly basis to the local food bank, and orphanage

5 TBL organic stevia powder

7 cups cold water

Directions:

1. First, put everything into a pot, and boil it for 5 minutes. Whisk it a few times.

2. Next, strain it with a fine, metal mesh strainer and cheesecloth, overtop a pitcher.

3. Finally, serve it hot or well-chilled with an extra-long, organic cinnamon stick.




Downeast Maine Kumquat & Saffron Pickles, South Asian-style

Makes 12 cups

6 pounds 12 ounces organic kumquats
(Pre-soaked, washed, then boiled with three teaspoons of organic turmeric powder for 5 minutes. Drain it of water and put it on a double-layer of organic, unbleached paper towels).

4 TBL organic saffron threads, freshly- and finely-ground

12 TBL organic, French sea salt, finely-ground

4 tsp organic fenugreek seed powder, freshly- and finely-ground

7 tsp organic mustard seed powder, freshly- and finely-ground

3 TBL organic chili powder, Indian, fair-wage

12 TBL organic ghee, melted

1 cup organic, food-grade, natural vitamin E oil, as a natural food preservative

Directions:

First, cut the boiled kumquats into fourths. Remove any seeds/pips from them. Toss the kumquats with twelve tablespoons of organic, French sea salt, finely-ground.

Then, get a large, sterilized, 12 cup-sized, food-grade, microwaveable, oven-safe, Pyrex, glass jar, with an air-tight lid. To sterilize it, dip the cleaned jar and lid into boiling water for 1 minute and then dry it in the oven, at 325°F, center rack, preheated, for 5 minutes.

For one week, keep the jar tightly closed with the kumquats, and rotate it daily in a fridge wine rack. Wrap it in a towel so it fits securely in the fridge wine rack.

After one week, oven-roast the fenugreek and mustard seeds, freshly- and finely-ground into a powder, with the organic, melted ghee. Roast at center rack, 325°F, preheated, for 10 minutes. This releases the spices' fragrances.

Next, add the kumquats, spices in ghee, chili powder and saffron together into a mixing bowl. Pour those ingredients into the re-cleaned, re-sterilized glass jar.

Then, pour the food-grade, natural vitamin E oil on top of everything. This will help prevent the top layer from oxidizing, or changing color.

Finally, re-close the lid tightly, and store it in the fridge, labeled, with the date.


















Downeast Maine Quick & Easy Pineapple Chutney

For 20 adult servings

5 large, fresh, organic, Mexican pineapples, slightly underripe, fair-wage, with all tough center cores and exterior removed

* Cut it into 1-inch pieces, then drain it on a double layer of organic, unbleached paper towels for 5 minutes. Next, lightly salt the pineapple bits and let it rest for another 5 minutes to draw out the excess juices. (Use 10 tsp organic sea salt, finely-ground for this part).

5 tsp organic, French sea salt, finely-ground, for final step

5 large, organic, fresh, red, Thai, chili peppers, stems removed, washed, de-seeded, finely-minced

10 tsp organic ginger juice: 50% or 5 tsp fresh, organic, ginger root puree & 50% or 5 tsp hot, freshly-boiled water, whisked together

150 grams or 1 and a quarter cups organic stevia powder

4 organic, fresh, Key limes, juices only

Directions:

First, mix everything in a Tupperware container with a lid. Then, chill it in the fridge, covered for 24 hours, prior to serving.

Downeast Maine Memsahib's Lamb Raan Ingredients

This is a leg of lamb, South Asian-style, with an almond butter and yogurt coating. Typically, pureed, blanched almonds are called for, but it's quicker to use almond butter, unsalted, and unsweetened.

Here's a recipe for 20 adult servings. It would be an excellent PTA brunch fundraiser, paired with Spiced Banana Flower/Blossom, Sambhar and steamed, organic, basmati rice. Goll Bhaji served with a spiced, pineapple chutney would be an appropriate tea time appetizer for this brunch recipe also.

5 qty organic, fresh, Aussie, halal, leg of lamb
Each leg of lamb should be 4 pounds each. Trim all fat off the lamb. Then, pierce it all over with a sharp, paring knife, to allow the marinade to seep in for 24-hours. Use a flavor injector for the best results.

Marinade:

Use half of this marinade for 24 hours, flavor-injected into the lamb. Marinate the flavor-injected lamb, covered with plastic wrap all over, in the fridge, in an airtight, plastic Tupperware container.

The other half of the remaining marinade should be refrigerated in Tupperware. Use it to coat the lamb all over, with the almond coating ingredients right before baking.

25 large, fresh, organic, red shallots, pureed

10 cups organic, fat-free, pasteurized, plain Greek yogurt

15 organic, fresh, red, Thai chili peppers, stems removed, washed, de-seeded, then pureed

2 cups organic, fresh, ginger root, pureed

10 TBL organic cumin powder

12 TBL organic, fresh, Meyer lemons, juices only

4 TBL organic cardamom powder

Almond Coating:

Combine this with half the marinade and coat each leg of lamb right before baking at 375°F, center rack, preheated, for 1 hour, covered with buttered foil. Then, to brown the almond coating, uncover and bake the lamb for another thirty minutes.

2 and a half cups organic, pasteurized, non-fat, plain, Greek yogurt

15 TBL organic, pure, almond butter, creamy, pre-stirred, unsalted, without sweeteners

5 TBL organic, light brown sugar, firmly-packed, fair-wage

10 TBL organic beet root juice, for natural, reddish coloring














Downeast Maine Rasam/Mulligatawny Amaranth Seed & Lobster Pilaf Ingredients

12 cups organic turkey broth (see previous blog recipe for this)

12 TBL organic tamarind paste/puree

6 TBL organic coriander seed powder

8 TBL organic cumin seed powder

4 TBL organic, coarsely-ground black pepper

4 cups organic ghee

8 large, organic, fresh, red, Thai chili peppers, de-seeded, stems removed, washed, then finely-minced

24 large, organic, fresh, red shallots, washed, two outer layers removed, both ends trimmed off, then finely-minced

12 fresh, organic, curry stalks, leaves only, 7 inches in length per curry leaf stalk

1,500 grams organic, fresh, shelled, steamed, lobster tail meat, from Maine

12 cups organic amaranth seeds, steamed in organic turkey broth with 4 TBL organic saffron threads, freshly- and finely-ground

Directions:

1. Set the lobster and amaranth seeds aside.

2. Put the rest of the ingredients into a deep-dish, lasagna pan, non-stick metal, extra-large, on center rack. Bake at 350°F, for 35 minutes, preheated, to bring out the spice fragrances. Stir it every 5 minutes.

3. Combine all ingredients together, like a rice pilaf.

***This can be made into a modified Patra Ni Macchi also. For that, add:

-Young banana leaves, organic, to wrap it into parcels

-2 fat bunches of fresh, organic cilantro, leaves only, pre-soaked, then washed

-4 green, organic, unripe mangos, peeled, washed, de-seeded, then pureed

-12 TBL organic, fresh, Meyer lemon juice

-12 fresh, organic mint leaf sprigs, each 5 inches in length, leaves only, for garnish, after steaming the parcels

-4 tsp organic, ground cumin powder

-800 grams fresh, organic, pureed coconut (presoak and drain dried coconut, before pureeing it)














Singharas/Bengali Samosas Ingredients

These are triangular-shaped dumplings, deep-fried. Gather all the poor, pregnant pre-teen, English-language learners up to help each governor and their team of 5,000 civil rights attorneys to make these Bengali samosas.

This is a fundraiser recipe for them to be included, with full scholarships to the finest, New England, all-girls, feminist, inclusive,  year-round, I.B., bilingual, Mexican-Spanish/British-American boarding schools. Those will need to be created by every governor, because those types of boarding schools don't currently exist in the U.S.

Ingredients:

Pastry:

4 cups organic chestnut flour, plus an extra two cups for flouring the rolling pin and kneading surface

4 TBL organic ghee, halal

1 cup warm water

Meat Filling:

2 and a half pounds organic lamb mince, halal, from an African, female, Muslim, first-generation immigrant-owned, small farm and butcher shop, fair-wage

4 TBL organic cinnamon powder, fair-wage, from South Vietnam

2 TBL organic clove powder, halal

3 TBL organic cardamom powder, halal

Cut a cross at the top of each tomato, an inch deep. Blanche/submerge the tomatoes in boiling water for 25 seconds. Then, peel the skins off. Next, de-seed them, and keep the juices.

Downeast Maine Wild Damson, Wild Plum & Wild Rosehip Jam

Here's a recipe for a GLBT Battered Shelter Fundraiser. All ingredients should be from GLBT, battered spouse-owned farms and factories only. Too many unreported, and reported sexual assaults against the GLBT community have occurred within the Tri-States, Maine, Colorado, California, Hawaii, Georgia, Virginia, D.C., M.D., Massachusetts, Florida, Australia, Mexico, and Canada.

They are then repeatedly re-victimized in the school community, military, law enforcement, court systems, media, healthcare systems including at the VA's, Social Services, by supposed family therapists, social workers, counselors, psychiatrists, disreputable law firms, friends, colleagues, family members, and even by their own places of worship.

We need the ACLU, FBI, NAACP, all governors, all mayors, Ms and Lillith magazine executives to address this at the next Democratic and Republican Party meetings. Please pass this onto them.

Ingredients:

2 pounds organic, wild, hedgerow fruits: damsons, elderberries & blackberries

8 cups organic, wild, Maine rosehips, fresh/thawed

1/3 cup organic, food-grade, rose oil

8 cups organic, wild plums, presoaked, washed, then chopped into the size of raisins

4 large, organic, Meyer lemons, the juice only

4 cups organic, food-grade, natural vitamin E oil, as a preservative and for extra antioxidants

13 cups organic stevia powder

Add enough organic pomengranate juice to cover all ingredients in a large crockpot

Directions:

1. Put everything into a large, covered, crockpot on simmer/low for two hours. Mix it with a whisk.

2. This can be put into the fridge, in used, sterilized, baby food jars with dated labels. Serve it with organic, Dutch pancakes, Irish crepes/pancakes and organic, Mexican crema/Irish clotted cream.

This is a Cyberbullying & Identity Theft Fundraiser recipe. We're going need to raise 25 million dollars to create a high-tech task force with former law enforcement officials turned CCIE Security professionals with Master's degrees in Homeland Security.

The iillegally laid off, disabled female, minority, military veteran, Denver Police officers will all need free, full tuition, fees & books, for Master's degree scholarships and safe, PTSD-friendly,  free housing right next to CTU campuses.

Colorado Technical University offers Master's degrees in Homeland Security counter-terrorism also. The Colorado governor will need to find out if they can receive 10 million dollars worth of scholarships with CTU.

Spicy, Pickled Asian Crawfish Recipe: Another Wonton Spoon Appetizer

This is a recipe for an FBI Hate Crimes Task Force fundraiser, in the state of Colorado. We're going to need to raise enough money to pay the salaries of 55,000 more ex-military, feminist, FBI agents in the state of Colorado, who are highly-experienced in protecting women and children, especially female, disabled, minority veterans.

2. Bring the rest of the ingredients to a boil for two minutes, then simmer on medium-low for 15 minutes.

3. Allow it to cool for 25 minutes.

4. Combine all ingredients into a plastic, Tupperware container for 12 hours, refrigerated.

5. Serve on wonton spoons that can lay flat on a serving tray.

Job Hunting on a Budget

The Colorado governor will need to order all these supplies in bulk, at a 50% discount, plus, sales tax-free for all the U.S. Army, poor, minority, formerly, honorably enlisted who were recently, illegally laid off in great numbers due to: racism, disablism/disability discrimination,  classism, ageism, sexual orientation discrimination and sexism.

They are continually denied employment, fair housing, social security and VA disability compensation, food stamps, veterans' benefits due to classism, racism, and their veteran status.

Some high-ranking, affluent, Caucasian veterans are not assisting or recommending them, including the federal, all states' and all counties' governments.

This violates many federal laws, which are supposed to protect them and give them employment preference. The recent U.S. Supreme Court ruling against affirmative action is also illegal and outright racist to military veterans and their families.

***Those U.S. Chief Justices of the U.S. Supreme Court will all need to be investigated, for any previous cases they ruled upon, in a racist manner, by the FBI, NAACP and ACLU.***

***The FBI, ACLU, NAACP will all need to be involved in straightening this out for all of them and all of their families.***

Economical Picks (for Impoverished, Enlisted, Minority, Military Veteran Men):

Comfort Travel Suits (Stafford brand, I think) in only solids:

Dark navy blue, dark charcoal gray, and black colors are best for interviews. No pleats or cuffed hems for the pants. Order from online, after trying them on in the store first. There are more colors and sizes available online. Also those suits haven't been tried on yet, so are more brand new.

They're lightweight, more moveable, European tailored/close-fitting, don't wrinkle and are better for summer-time weather, or sub-tropical climate interviews.

JC Penney also carries good V-neck, white cotton undershirts, short-sleeved, also.

Also, consider the JC Penney 100% silk ties, not the skinny or patterned ones. Get solid, medium blue, and solid, medium gray ties. Avoid tie clips or pins. Avoid flashy jewelry also.

Use a half-windsor knot. Brooks Brothers has a free, YouTube instructional video.

Men's Wearhouse also has free, illustrated tie knot brochures. Ask the sales person for one with the half-windsor knot instructions.

Ecco, black, matte leather, dress shoes with laces are a comfortable choice, paired with black dress socks.

Black, matte leather, narrow, dress belt and matching watch are another good, understated choice. Make sure your belt buckle is matte silver and plain. Center it to your belly button, matching up with your well-tucked in, dress shirt's "gig line" or button-up line.

Don't forget to shave off all facial and underjaw hair, and get a professional haircut. If going gray, dye your hair professionally also to your natural color before it started graying, due to ageist job interviewers.

Get a professional eyebrow trim, wax and tweeze two weeks before interviewing also. Clip your nails short, and use a nail brightening kit (from the drugstore) on all nails.

Nose and ear hairs should be trimmed.

Don't wear any cologne, or use any scented products, including scented hair products, laundry detergent or fabric softener.

Create an online, linkedin.com profesional account without your references' personal/professional contact info, to protect their privacy. After you speak to the interested, verifiable company, headhunter or recruiter, email them your references' contact information upon request.

For that and your hard-copy/paper resumes, get a free gmail email address with your full name.

For the hard-copy resumes, use the heaviest-weight, bright white resume paper from Office Depot. You can also design and order business cards there on their computer terminal. Look for the plainest white or light gray ones, with an understated design, e.g. two vertical, black stripes on the left-hand side.

They carry dark, navy blue resume folders with business card inserts also. I love the portable, Mead, black, At-A-Glance organizor, monthly, with notes, #70-6S24 there too.

Office Depot, Staples, and Office Max also carry a limited selection of black, matte leather business card holders and hard-case suitcases. Pick the black, matte leather suitcase with a matte, silver combination lock.

Check the Wilson leather outlet shops for that too.

Footsmart (online) has diabetes-friendly, black, cotton/bamboo dress socks that are moisture-wicking, and seamless at pressure points. If you find good socks, get 24 identical pairs at least. That way you don't have a bunch of mismatched socks.

Who am I?

I am...

A South Vietnamese mayor, regional bank owner/president, and philanthropist's grand-daughter, on my mother's side.

I am the daughter of a South Vietnamese Army Colonel, who is also a Vietnam War POW. I am also the maternal niece of a South Vietnamese military" district attorney" who was a Vietnam War POW, for almost a decade.

I proudly hail from the state of Virginia and grew up a poor, disabled janitor's daughter, close to D.C., in the ghetto, and barrio of Northern Virginia. I'm proud to be from a double-POW, Vietnam War family.

As a child and teen, I often worked, cooking, babysitting, cleaning, laundering, and in retail, since both of my parents were and still are disabled.

I'm a former, active-duty, US Navy radioman/DP/IT. I am also, a female, minority, formerly enlisted, petty officer. I became a Persian Gulf War veteran at age 17.

I made E-4 at age 18, in less time than most, based upon my performance, conduct, character academic test scores in boot camp and 'A' school.

As a former military spouse, active-duty, service member mother, disabled veteran homemaker, I happen to also be a Jewish feminist, and Democrat.

Gurl Power Fundraiser for the NRA & Denver Police Department

We're going to need the NRA's finest class-action attorneys to help the poor, disabled veterans get their Habitat for Humanity houses in safe neighborhoods.

They're too impoverished and disabled to take Krav Maga or own a concealed weapon, and have to live in low-income housing projects, which are continually underfunded for law enforcement.

The states have also been furloughing military veteran police officers, and replacing them with inexperienced, non-veteran rookies. This will need to be addressed at the next Republican and Democratic Party meetings.

Ageism, classism and discrimination against military veterans by law enforcement communities will need to be investigated by federally-funded hate crime task forces.

Hate crimes against disabled veterans will need to be re-investigated by the illegally laid off, disabled veteran police officers who will need to be hired by the FBI.

We'll need the Gen X and third-wave feminist attorneys to hold an NRA fundraiser with minority and female rap artists, for the poor, female, minority, U.S. Army enlisted, who were illegally laid off and continually disenfranchised.

There needs to be an FBI re-investigation into the Denver Police Department for recently, illegally laid off, police officers' severe depression and attempted suicides. The Denver Police Department may need to face federal charges for violating the Privacy and HIPAA Acts, which allows all law enforcement the right to get treated for career-inflicted, and career-exacerbated post-trauma and stress.

Aussie Organic Potato-Crusted Beef & Lamb Stew

Use a lidded soup terrine that can go in both the oven and on the stovetop for this recipe. This is a modified Irish farmhouse recipe, that includes a grated, smoked gouda cheese and grated potato topping.

Ingredients:

Grated Potato Crust:

Use the large hand-held grating side or the largest grating blades on a food processor for the potatoes.

1 pound organic, raw, soaked, peeled, washed potatoes

Blanch or quick-boil the grated potatoes in organic, pasteurized, fat-free buttermilk on high boil for five minutes. Add 1 TBL of organic sea salt, finely-ground, when the buttermilk comes to a boil, but right before adding the grated potatoes.

1 TBL organic, extra-virgin olive oil, from olive oil factory owned by the Israeli victims who helped bring former Israeli president, Moshe Katsav to justice for multiple sexual assaults

2 TBL organic, oven-roasted, fresh garlic puree

1/2 cup organic, pasteurized, smoked Gouda, shredded (finely)

1 tsp organic sea salt, finely-ground

1 TBL organic black pepper, coarsely-ground

3 TBL organic, dried rosemary, coarsely-ground

3 TBL organic, dried, lemon myrtle

Marinate the beef and lamb cubes for 24 hours in this:

3/4 pound of organic, 2-inch cubed, Aussie lamb, from a 7,000-acre ranch owned by feminist, first-generation immigrant, female, South Asian-Australian police internal affairs, specializing in hate crimes against the poor, South Asian immigrant community

3/4 pound organic, 2-inch cubed, grass-fed beef, from a 7,000-acre ranch owned by the feminist, first-generation immigrant, female, Afghani-Australian police internal affairs, specializing in hate crimes against the poor, Afghani immigrant community

1 and a half cups organic Aussie shiraz, from a 10,000-acre organic vineyard owned by feminist, first-generation immigrant, female, minority, Australian police officers

2 bay leaves, organic

2 cups organic, fresh rosemary, soaked, washed, then chopped into 1/4-inch pieces

4 TBL organic papain and bromelain powder, as a meat tenderizer

2 tsp organic juniper berries, freshly- and finely-ground

After marinating the beef and lamb meat ingredients, brown the meat, for five minutes, then add them, with the marinade to a soup terrine with:

8 large, organic, fresh red shallots, each peeled,  soaked, washed, ends trimmed, then cut into four

8 large, organic, fresh garlic cloves, each peeled, soaked, washed, then ends trimmed off

4 large, fresh, heirloom carrots, each soaked, washed, peeled, both top and bottom ends trimmed off, then cut into three pieces

2 large, organic, fresh, heirloom fennel bulbs, each trimmed like a white onion bulb, soaked, washed, ends trimmed off, two outer layers peeled, then cut into four

4 cups organic, fresh/reconstituted porcini, cremini, oyster and chanterelle mushrooms, soaked, washed, then cut in four

12 cups organic beef broth, from previous recipe posting (omit the pho spices)

2 TBL organic cornstarch, food-grade, mixed with 1/4 cup of water into a paste

2 tsp organic sea salt, finely-ground

4 tsp organic, black pepper, coarsely-ground

3 cups organic, fresh parsley leaves, stems removed, soaked, washed, then chopped into 1/4-inch pieces

3 cups organic, fresh lemon thyme leaves, stems removed, soaked, washed, then chopped into 1/4-inch pieces

Directions:

1. Excluding the potato crust ingredients, put all the rest into the soup terrine.

2. Simmer on medium-high for five minutes.

3. Turn the temperature down to medium-low, cover with a lid, then simmer for one hour.

4. Layer the potato crust ingredients evenly overtop the stew. Preheat the oven, with center rack to 400°F.

5. Bake the potato-crusted stew, uncovered, for thirty minutes. The top should be golden-colored and crispy.

Vehicle Purchasing Tips & Recall Websites

For any new vehicles, get a Consumer Reports Price analysis, for $14 on the exact model, to find out what the fair price is for it, prior to negotiations with the dealership. Make sure to get pre-approval for the auto loan, prior to negotiations.

Ask three other dealerships for a guaranteed trade-in price if relying upon a trade-in for negotiation. Also, have at least three other dealerships give you a best offer before you purchase any vehicle.

***Check for safety recalls online at repairpal.com and safercar.gov websites. Those recalled parts can sometimes be inspected, repaired, and/or replaced, free of charge by the manufacturer, but needs to done prior to purchasing any vehicle.

Otherwise, the manufacturer may delay or refuse to fix the recall defects. If it's a wiring harness problem, it can cost ten thousand dollars or more of electrical system collateral damage by the time it's discovered, even if the the defective part(s) is/are finally repaired by the manufacturer for free. The collateral damage will be costly to you, because the manufacturers will probably not cover that, unless there's a successful class-action lawsuit.

Hiring a private attorney to go against an automotive manufactor will cost at least $10,000 for the retainer, plus, maybe $20,000 more for legal fees, and, independent, professional mechanics to testify on your behalf. It may be difficult to find mechanics willing and qualified to testify against the manufacturer also.

Don't fall for any supposed "veteran-approved" dealerships, any extra options or be pressured to get extended warranties either. They often like to attract customers who are disabled veterans, especially female minorities, and prey upon them.

For both new and used vehicles, hire an ASE-certified mechanic, familiar and experienced with that specific vehicle's make and model. They should have at least 15 years or more experience in the industry, without job-hopping.

If they've only worked for one year at every single place of employment, then select the mechanic with the most stable employment history. This could cost approximately $90/hour. They should test drive the vehicle also.

After you drive out of the dealership with the vehicle, your mechanic should re-check it for you again, to make sure it wasn't stripped or switched with another, lesser one, potentially a stolen one. This can happen with both new and used vehicles, including, from supposed "veteran-approved" dealerships.

For vehicles at or over 60k miles, the VIN-verified entire brake system needs to be completely inspected, along with being bled. Brake calipers, pads and the brakes themselves need to be inspected.

All VIN-verified, auto insurance claims, especially for floods, auto maintenance and auto body repair information must be gathered on the vehicle. Your mechanic will need to analyze them for any red flags. Missing complete records are a definite red flag.

More than one owner, reported/unreported collisions, unwillingness to match the best price from three other dealerships, BBB complaints, negative internet/YELP reviews, and odometers that don't seem in line with the wear and tear on the vehicle are signs of a corrupt dealership. Walk away and don't buy that vehicle or purchase anything from that dealership. File an online/YELP review and complaint with the BBB.

All fluids, fluid levels and spark plugs have to be correct for that vehicle. Spark plugs should only be brand new, for all used vehicles. Require a complete tune up, with all fluids flushed and/or replaced. The coolant and transmission fluids will all need to be flushed and replaced with the highest-rated fluids.

Never take any dealership's word that they have put oil in it. Open the hood and check yourself, personally. Also, check the engine's VIN again, in case they have switched the vehicle with a lesser one on you, before driving out of the dealership.

The vehicle purchasing process may require checking the engine's VIN four times even. If the vehicle left your sight during the inspection and purchasing process, it could have been switched with a lesser or stolen vehicle. Never be rushed about re-checking the engine's VIN yet another, even fourth time.

The battery level and battery itself needs to be checked by your mechanic. The vehicle will then need to be put onto a lift, steam cleaned, and checked for any leaks. The serpentine or S-belt must also be brand new. Acquire a Carfax report on your own. Don't rely upon what the dealership prints out for you. Check the VIN on the vehicle's engine, and also, with your own report.

At 75k miles, the timing belt and air conditioning belt must be brand new also. All tires should be brand new, all four must also be matching and appropriately inflated to the right tire pressure. For those vehicles, select from Consumer Report's most reliable, used vehicles only. Avoid the vehicles without electronic stability control, antilocking brake systems, and side-curtain airbags.

Don't forget to check all reviews on that vehicle in Consumer Reports. Get a Kelley Blue Book report on it, that your mechanic also will need to analyze. Sometimes the wear and tear is more than the dealership is claiming.

Downeast Maine Chai-Muscat Grape Barmbrack/Sweet Bread

Barmbrack is an Autumn, Irish sweet bread, similar to a brioche. Here's a GLBT fundraiser recipe with lots of love and prayers that the GBLT community can raise enough money for 5,000 battered GBLT partners to own and operate 2,500 inclusive, safe, hydroelectric and fan turbine-powered, extra-large, youth hostels for the Tri-States' GLBT families in the state of Maine, this upcoming Autumn.

The disenfranchised, impoverished, first-generation, immigrant GLBT teens can be included in safe, bilingual, nurturing Fresh Air summer camps this way. They'll need the GLBT community to own 5,000 acres, donated by the Tri-States, for their very own, inclusive, Fresh Air Summer Camps. There, they can be taught to grow heirloom, international, organic vegetables, spices and culinary herbs.

There should be enough capacity at each concrete, steel-beam construction, fire-proofed, hate crime-proofed, two-acre plot of land for 500 minority, first-generation immigrant, impoverished, GBLT teens, plus 250 supervising, Democratic, military veteran, minority, female volunteer adults, to each have their own dead-bolted bedroom, wheelchair-accessible full shower/bathtub and wheelchair-accessible toilet/bathroom. This is to make it as safe as possible.

There needs to be year-round, professional, private, security staff (female, minority, feminist, military-trained, armed veterans & feminist, military veteran, armed, female, minority police officers), for each two-acre site. Their fair-wage salaries, wardrobes, and free, on-site, year-round, housing must be 100% federally-funded.

Also, there should be 24/7, wireless, night-vision/weather-proof, exterior, security cameras with a double perimeter, double-gated, concrete fencing.

There should be a two feet, elevated, well-lit, flood-proofed, radiant-heated, plowable driveway (2 driveways per plot of land, one for entering, one for exiting) with two lanes to exit and two lanes to enter per two acre-site.

Each fence should ideally be six feet buried underground, with barbed wiring in both directions, and stand 24 feet above the ground level. Each fence and each 24 digit alphanumeric password, plus biometric, finger print-locked gate needs to be a full 5 inches thick.

The estates should each have 24/7, exterior/indoor, audio/visual/night vision security cameras for all gates, driveways, roofs, housing entrances, housing exits, main areas  and hallways.

Criminal stalkers, arsonists, alleged sex offenders, vandals and hate criminals within ten miles of each site should be prosecuted in a federal court system.

The land must be zoned as federal government land, as legal protection for the GBLT and their families in Maine. Maine is a state infamous for its non-inclusiveness, high rates of tolerated marital rape, repeatedly protecting U.S.-Canadian drug cartels, promoting a culture of legalized domestic violence against poor, minority women, children, and GBLT, racially-motivated, hate crimes.

Please pass this federal funding request onto the Democratic Party, ACLU, NAACP, Ms and Lillith feminist magazine executives. Legal action (with only anti-drug cartel, federal court systems, not in those corrupt, drug cartel-supporting, state court systems) must be taken against those violent, international drug cartels within the state of Maine, especially at the U.S.-Canadian borders.

This Irish barmbrack recipe is for 48 servings, or 4 qty of eight-inch, round cake pans, each sliced into 12 slices.

Ingredients:

Fruit:

4 cups Tazo Vanilla Chai Tea Latte

2 cups fair-wage, single-malt scotch, with the alcohol cooked off it by simmering it for 7  minutes on medium-low heat

3 cups organic, dried Muscat grapes, organic, candied fruit peels, finely-grated, or organic multi-colored raisins

*Soak the fruit, scotch and chai in the fridge overnight/24-hours.

Yeast:

2 cups double/heavy cream, organic, pasteurized, from grass-fed cows only, heated to 115°F, but not exceeding that temperature, as it'll deactivate the yeast

1/2 cup organic vanilla bean gelato ice cream, melted, but not hotter than 115°F to prevent the yeast from being killed

4 tsp double-acting, active, dry yeast

2 TBL organic, light brown sugar, firmly-packed, fair-wage

3 cups organic, chestnut flour

Brack:

1 cup organic, unsalted butter, pasteurized, from free-range goats' milk, warmed/softened

2/3 cups organic, stevia-sweetened, Mexican vanilla bean syrup, fair-wage

2 tsp organic sea salt, finely-ground

2 tsp organic, pumpkin pie spice blend

4 large, organic, heritage chicken eggs, Irish-buttered, fresh/raw, not beaten up, as it's to be added one at a time in step 5, of the directions

6 cups organic, chestnut flour

Directions:

1. Soak the Muscat grapes (dried) in the chai and scotch for 24-hours.

2. Using a fork, stir all the ingredients for the yeast together.

3. Cover the yeast dough and place in the oven/draft-free environment, to rise, or double in size, for 30 minutes.

4. Use a hand-mixer, or standing mixer with a dough hook for this part:

On low speed, beat the butter, sugar, pumpkin pie spice blend, sea salt, eggs (one egg at a time), flour (one cup at a time) to the mixing bowl.

5. Switch to medium speed on the mixer/hand-mixer. Then, blend in the yeast dough for six minutes.

If hand-kneading, place it onto a lighly-floured surface, then knead it lighly for five minutes. Set it aside for 20 minutes, then knead it again for another five minutes.

6. Lightly mist organic, hazelnut oil all over the dough ball.

7. Cover the dough ball in a bowl, with plastic wrap. Then, allow it to double in size for one hour, in a draft-free environment.

8. Drain the Muscat raisins, and pat them dry with an unbleached, organic cotton, kitchen towel.

9. Place the dough ball onto a lightly-floured surface, then gently shape it into a rectangle.

10. Put an even layer of the Muscat raisins overtop the rectangular dough.

11. Next, fold the dough rectangle into three equal-sized sections, similar to a business letter.

12. Then, turn the rectangle, so that you're facing a tall rectangle.

13. Fold it again, into three short sections.

14. Repeat steps 11 through 13 three more times, to blend the raisins in more fully.

15. Butter 4 eight-inch cake pans. Then, place a round parchment paper or foil on the bottoms of each cake pan. Butter the bottoms again.

16. Divide the dough into 4 equal-sized pieces.

17. Fold each dough ball into a final tri-folded "business letter"and place each so that the smoother, backsides are facing up in each pan. Also, the folds should be pointed down.

18. Cover each cake pan with plastic wrap and allow it to rise for one hour. After 30 minutes, start preheatingthe oven(s).

19. Preheat the oven(s) to 400°F, with the center rack(s).

20. Remove the plastic wrap and bake each sweet bread cake for 45 to 50 minutes.

21. Check after 45 minutes to see if the bread is golden brown-colored, and puffy.

Put a long, metal, kebab skewer into each bread center. It shouldn't have any wet batter on it at all.

Downeast Maine Yorkshire Pudding Recipe

This is a St. Jude's fundraiser recipe. The best small venue would be at Teddy Roosevelt's historic cabin in Downeast Maine.

Queer Eye for the Straight Guy and Ms. Jay, from America's Top Model should be the ones to organize the inclusive fundraiser there.

They'll need a donated, brand new, custom-built, private jet, equivalent to a 747 in size, to continue their good works in the impoverished, first-generation immigrant communities also.

The GLBT community should be honored at St. Jude's hospitals afterwards, for their civil rights activism and generous philanthropy on behalf of the poorest U.S. communities.

Please pass this onto the ACLU, New York, Californian and Coloradoan governors.

Ingredients:

7 double-yolked, extra-large eggs, organic, fresh, Irish-buttered, from heritage chickens

3 cups organic, unsweetened, heavy cream, pasteurized, from grass-fed cows only

4 cups organic, turkey stock/broth from a previous blog posting (or the beef broth from another recipe posting, excluding the pho spices in the bouquet garni)

3 cups organic chestnut flour

2 and a half tsp sea salt, finely-ground

Directions:

Puree the cream and eggs in a blender, until smooth. The, add the flour and salt into the blender. Puree for another minute, then refrigerate. Preheat the oven to 425°F, with center rack.

Next, use unsalted butter or organic goose fat, melted, to grease a large muffin pan. Heat the greased pan in the oven for 7 minutes. Then, take it out.

Fill each muffin cup 2/3 full, or 3 to 4 TBL of the batter per cup. Bake this for 25 to 30 minutes, or until a toothpick comes out of the center Yorkshire pudding cleanly, without any wet batter on it. It should look golden-colored and puffy.


Downeast Maine Creme Anglaise for Pumpkin Cheesecakes

For 12 adults: drizzle this overtop the pumpkin cheesecake from a previous blog posting.

Ingredients:

4 cups eggnog, organic, skim, stevia-sweetened, pasteurized, from grass-fed cows only, hot (cook in a double-boiler for 5 minutes)

4 large, organic, fresh, heritage chicken eggs, double-yolked, Irish-buttered, beaten up

2 large, fresh/raw, organic double yolks, excluding the egg whites, beaten up, Irish-buttered, from heritage chickens only

1/3 cup organic stevia powder

1/4 tsp salt, organic sea salt, finely-ground

3 organic vanilla beans, fair-wage, pureed

Directions:

Whisk eggs, yolks, and the heated eggnog together. In a mixer/mixing bowl, add stevia, salt and vailla. While beating it with a mixer/hand-mixer, add one cup at a time of the heated eggnog mixture.

Next, put all ingredients back into the double-boiler. Whisk it continually for five minutes, while the double-boiler is on high boil, beneath the ingredients.

Finally, put this, covered, into the fridge to set or thicken it further for two hours. Pour this overtop the pumpkin cheesecake from a previous blog posting.

South Asian Tandoori Lobster Ingredients:

5 large, fresh, live Maine lobsters

2 large, fresh/raw, organic, heritage chicken eggs, Irish-buttered, beaten up

4 TBL organic garam masala spice blend

1 and a half ounces organic butter, from grass-fed cows only, melted, pasteurized

4 TBL organic, fresh, Meyer lemon juice

1 tsp ajowan

1 tsp sea salt, finely-ground

4 TBL organic besan flour

4 TBL organic stevia powder

1 tsp organic, red cayenne powder

1 tsp organic, smoked, Hungarian paprika

4 TBL fresh, organic ginger root, peeled, soaked, washed, then pureed

4 TBL fresh, organic, garlic cloves, smashed, peeled, ends trimmed, soaked, washed, then pureed

1 and a half cups organic double/heavy cream, unsweetened, pasteurized, from grass-fed cows only

Garnishing:

2 large bunches of organic, fresh cilantro leaves, stems removed, soaked, washed/triple-rinsed, then, chopped into 1/4-inch pieces

Directions:

First, freeze the lobsters for 2 hours, then use an electric knife to cut each lobster in half, lengthwise.

Next, remove the tail meat, and chop it into large chunks.

Clean the shells, including heads, inside and outside with water and a bit of lemon juice or apple cider vinegar.

We'll later oven-roast the shells, to turn them bright red, separately from the lobster meat. ***They'll be used as natural dishes for the finished lobsters.***

Whisk all ingredients together, and marinate the lobster meat in the fridge, in air-tight, water-tight containers, covered for three hours.

To cook:

Preheat the oven to a low broil temperature. Set the shells in to roast at center rack, on a cookie sheet, until they're a bright red color, approximately 12 minutes.

Next, low broil the lobster meat in a glass bakeware pan, with the marinade, for approximately 12 minutes.

Turn it over with a spatula (heat-proof one), at six minutes, or halfway through the low broiling time. Add 10 more TBL of melted, pasteurized, organic, unsalted butter to it when you turn it over.

Finally, check the lobster meat with a meat thermometer.  Use the shells as natural dishes fo it. Garnish with fresh cilantro and organic, fresh, Meyer lemon wedges.




Downeast Maine Carob Macadamia Nut Fudge Ingredients

Recipe is for 32 qty bars, each 2.5 cm:

8 TBL organic brown rice bran oil butter substitute

2 cups organic stevia powder

1 cup organic dark sugar, fair-wage, firmly-packed

1/4 tsp organic sea salt, finely-ground

1 cup organic, condensed, unsweetened, evaporated milk, ultrapasteurized, canned

2 nine-inch crusts:

5 cups Swedish ginger cookies from World Market, in large, red tins, finely-ground

1 and a half cups organic chia seeds, dark

10 TBL organic brown rice bran oil butter substitute, melted

1/2 cup organic stevia powder

Fillings, 2 qty:

2 pounds pureed cottage cheese, organic, pasteurized, from grass-fed only cows, slightly warmed in the microwave/steamed

4 organic, heritage chicken eggs, fresh, Irish-buttered, beaten up

1 and a half cups organic stevia powder

1 cup organic, non-fat, ultrapasteurized, evaporated, condensed, unsweetened milk (canned, from grass-fed cows only)

53 ounces organic, heirloom pumpkin pie puree

Downeast Maine Carob Ganache Iced Mini-Bundt Cakes

Icing for double-yolked pound cakes or double-yolked mini-bundt cakes. A store-bought flour spray onto the mini-bundt cake silicone molds will help to get them out in good shape also.

Use double-yolked eggs from a small chicken farm in the Harper's Ferry, West Virginia area for this recipe. Harper's Ferry is also a beautiful place to hike, stay at a small, family-owned bed and breakfast or go hang-gliding.

You'll often see grandparents holding hands and taking a leisurely stroll, or small farms that take pride in all of their children's health and well-being.

The people of West Virginia are the epitome of a small town, Main Street American hospitality unrivaled by the Aloha spirit of Hawaii. In only one day at Harper's Ferry, you can appreciate the healing things in life which truly matter. And they're not store-bought, or Madison Avenue illusions.

Carob Ganache Icing:

36 ounces carob chips

12 TBL organic brown rice bran oil butter substitute

3 cups organic, non-fat, evaporated, condensed, milk, unsweetened, pasteurized

2 cups organic, pasteurized, non-fat, chocolate/carob yogurt

Directions:

Whisk over medium heat in a sauce pan until melted. You can also use a double-boiler or a stainess steel mixing bowl over a pot of boiling water for this.

3 cups organic chestnut flour

Downeast Maine Irish Pancakes Ingredients

For 2 adults:

2 cups organic chestnut flour

4 large, organic, Irish-buttered eggs, from previous blog posting, beaten up

4 TBL melted, unsalted Irish butter
Reserve an extra 1 cup of unsalted, Irish butter, melted or chopped into 1/4-inches for cooking the pancakes

1/2 tsp salt

***Season each of the cooked pancakes with a large, 4 TBL dollop of organic creme fraiche, a TBL of freshly-squeezed Meyer lemon juice and a light sprinkle (2 tsp) of organic stevia powder.




Belgian White Beer Cocoa Cake Ingredients

For 2 qty of nine-inch round cakes:

24 ounces Belgian White beer

1 cup melted, organic brown rice bran oil butter substitute

4 cups organic chestnut cake flour

4 cups organic stevia powder

1 cup organic, dark cocoa powder

2 tsp baking soda

1 tsp baking soda

1 cup organic, skim, pasteurized chocolate yogurt, stevia-sweetened

Downeast Maine Pumpkin Pie & Crust Ingredients

For two medium-sized pies:

28 ounces organic pumpkin puree

1 and a half cups organic stevia powder

1 cup water

4 large, organic, raw, heritage chicken eggs, the Irish-buttered ones from a previous blog posting

5 and a half teaspoons organic pumpkin pie spice blend

1 tsp organic sea salt, finely-ground

2 cups organic, pasteurized heavy cream, cows' milk

Pastry crust:

2 and a half cups organic chestnut flour

1 cup and 4 TBL finely-ground, Swedish ginger cookies (from World Market, in the large, red tins)

1/2 tsp salt

4 TBL cold water, chilled in the fridge for two hours

1 cup organic, brown rice bran oil butter substitute, cold/fresh from the fridge










Holidays on a Budget

Throughout the year, have the young children collect seashells, rocks, pine cones and acorns. Spray paint them metallic gold or silver.

Then, string them along the walls, bannisters, and tree, if celebrating Christmas. You may need to use a small power drill, to drill holes or metal ornament hooks.

Have the children fold origami birds and stars with metallic, origami paper. There are also oven-bakeable, non-toxic, clay kits for making tree ornaments. Attach bells to all the doors.

Make the season of giving last longer, by incorporating charity works into the holiday traditions, e.g. bringing donations into the local food bank and homeless animal shelters. Remember to set gift price limits with extended family members, as a courtesy.

Spend time together, instead of focusing too much on the gift-giving or presents. Annual classical symphony and opera trips during the holidays is another way to encourage a love and respect for talented, local musicians.

Chocolate Buttermilk & Cherries Quick Bread

For two loaves, each 8 and a half by 4 and a half-sized:

150 grams organic chia seeds

2 cups organic cherries, soaked, washed, de-pitted, stems removed, then coarsely-ground

4 cups organic chocolate buttermilk or your favorite chocolate gelato, melted (pasteurized, reduced-fat, stevia-sweetened, fair-wage, from Mexico)

4 large, organic, heritage chicken eggs, raw, the Irish-buttered ones, from a previous blog posting, beaten up

4 tsp organic, fair-wage, cacao nibs, pureed, from Mexico

10 ounces organic stevia powder

1/2 tsp salt

4 tsp baking powder

4 cups organic chestnut flour

12 TBL organic, brown rice bran oil butter substitute, melted

4 tsp yogurt (organic, pasteurized, Greek, chocolate-flavored, non-fat, stevia-sweetened)

Directions:

First, preheat the oven to 350°F, with the center rack.

Next, mix all ingredients together with a hand-mixer or mixer, on high speed, for 3 minutes until it's completely blended.

Then, mist the bread loaf pans with organic hazelnut oil.

Finally, bake at 350°F, center rack, preheated, for 45 to 50 minutes, approximately.

Downeast Maine Spiced Eggnog

1 gallon of melted, organic French vanilla bean gelato, pasteurized, reduced-fat, sugar-free, stevia-sweetened

(Melt this on the stovetop, in a pot, or in the microwave/steamer)

1/4 cup organic nutmeg, freshly-grated, and finely-grated

1/2 cup organic cardamom powder

1 cup organic cinnamon powder

2 cups organic vanilla beans, pureed (freshly)

1 cup organic ginger root, soaked, washed, peeled, then pureed

5 cups fair-wage, spiced, light-colored Jamaican rum, with the alcohol cooked off of it, by simmering it on medium heat, for 25 minutes with all the spices, in case there's any bacteria in them (including the pureed spices)

Downeast Maine Spiced Molasses Cookies, Carob Chip Icing-Dipped

Recipe is for 96 qty of cookies.

Ingredients:

5 cups organic chestnut flour

2 cups organic stevia powder

1/2 tsp organic sea salt, finely-ground

4 tsp baking soda

4 tsp organic pumpkin pie spice blend

2 TBL fresh, organic, peeled, soaked, washed ginger root, pureed

1 and a half cups organic brown rice bran oil butter substitute, warmed, but not melted

2 large, fresh, organic, heritage chicken eggs, Irish-buttered (look up the recipe from a previous blog post), beaten up
(Due to the raw eggs here, don't let the kids eat or handle any of the raw cookie dough).

1/2 cup organic dark molasses

OR

Instead of dark molasses, use a lower glycemic load ingredient, such as organic, stevia-sweetened, Mexican vanilla bean syrup.

OR

If in the soup kitchens, or shelters' kitchens, look for a sugar-free, pancake syrup, stevia, or sucralose/Splenda-sweetened.

Directions:

Mix all ingredients together with a mixer/hand-mixer, to form a large dough ball.

Next, preheat the oven with the center rack, to 375°F.

Then, using a small melon baller, half the size of a golf ball, scoop equal-sized, uniform, dough balls onto a buttered (unsalted, organic, pasteurized, goats' milk-based) cookie sheet, spaced one inch apart.

***It's easier to use a muffin or cupcake pan, that's been buttered, especially for the assisting children, under age 10.***

Let the cookies bake for ten to twelve minutes, approximately. Then, allow them to cool for 20 minutes.

Next, ice the cookies with a sugar-free, carob icing. Use a double boiler, or a stainless steel mixing bowl, well-supported by a larger-diameter pot of boiling water. Use either to melt the organic, sugar-free, carob chips over top it.

Stir it frequently with a wire whisk. Take the stainless steel mixing bowl off the pot of boiling water. Turn off the burner and set the boiled water onto a cool burner.

Dip each cooled cookie into the melted carob chip icing, so it's half-coated. Then place them onto waxed paper, on a cookie sheet, one inch apart. Allow them to cool for another 20 minutes, refrigerated.

Downeast Maine Cherimoya & Smoked Kipper Salad with Blood Orange Dressing

Ingredients:

4 cups fresh, organic, ripe cherimoya fruit, peeled, de-seeded, chopped into 1/4-inch pieces

48 smoked kippers, oven-roasted, from Downeast Maine or PEI, then chopped into 1/2-inch pieces

12 large, fresh, organic Romaine lettuce heads, bottom 2 and a half inches removed, soaked, washed, then chopped into 1/2-inch by one inch pieces

12 bunches fresh, organic watercress, stems removed, soaked, washed, then chopped into 1/4-inch pieces

12 cups organic, peeled, soaked, washed, then finely-shredded carrots

12 organic, English cucumbers, soaked, washed, peeled, then thinly-sliced (circular slices)

Cheese:

Drained, Stilton blue cheese cubes

Dressing:

Blood orange juice, organic, unsweetened 70%

Extra-virgin olive oil, organic 30%

Season the dressing with:

Dried, organic pineapple sage leaves

Oven-roasted, organic red shallots, finely-minced

Extra-virgin olive oil-toasted pine nuts

Organic, finely-ground sea salt, to taste

Organic, coarsely-ground black pepper, to taste

Garnishings:

Deep-fried, drained, organic baby vegetables:

4 cups baby beets, sliced in half

4 cups baby fennel bulbs, sliced in half

4 cups baby parsnips, cut in half, lengthwise

Moisturizing Gac Fruit Oil & Yogurt Facial

This is a fundraiser recipe for the South Vietnamese land mine & Agent Orange exposure victims.

They'll all need prosthetics, wheelchairs, multivitamins, landmine removal assistance, medical care and food aid.

Children even to this day, in oppressive, corrupt South Vietnam, accidentally die or lose their limbs playing soccer in South Vietnam, due to old, Vietnam War-era, buried landmines.

Their government regularly tortures and executes Buddhist monks, nuns, Catholic priests and nuns who feed or shelter the poor.

1/2 cup organic brown jasmine rice flour, food-grade, fair-wage, from South Vietnam

1 cup organic papain powder, food-grade, fair-wage, from South Vietnam

1 cup organic bromelain powder, food-grade, fair-wage, from South Vietnam

4 TBL organic, natural vitamin E oil, fair-wage, from South Vietnam

1 cup organic witch hazel lotion, organic jojoba oil-based, fair-wage, from South Vietnam, alcohol-free

1 cup aloe vera gel, organic, unscented, clear-colored, fair-wage, from South Vietnam

Directions:

Put into a blender. Then, keep refrigerated in air-tight, water-tight jars, labeled & dated.

Pregnant, High-Altitude/Military Active-Duty Chai Latte

4 cups hot, organic, non-fat, pasteurized, evaporated, condensed milk, unsweetened (from cans)

1/3 cup organic, pasteurized, infant formula

4 cups hot, organic Tazo brand, decaffeinated, vanilla chai latte (waxed cartons)

1 cup melted, organic, reduced-fat, vanilla bean gelato ice cream, fair-wage, stevia-sweetened, pasteurized, from a local, small, organic goat dairy

2 TBL organic stevia powder, or to taste

Directions:

Mix it together in a blender. Serve with reduced-fat whipped cream, and an organic vanilla bean, extra-long.

Cheese-y Potato Soup (Soup Kitchen Recipe)

All of these ingredients will need to be donated to all of the latchkey orphans and soup kitchens:

This is an organic fennel bulb and tri-colored potato soup in French onion soup. It's topped with Anejo and triple-cream brie cheese.

Ingredients:

8 cups fresh, organic mushrooms: porcini, cremini, oyster and chanterelles, soaked, washed, then chopped into 1/4-inch pieces

4 bags of organic tri-colored baby potatoes, round, red, purple and white, thin-skinned, scrubbed with cold water spray in a colander/drainer, leave the skins on
(each 1/2, or half the size of a golf ball, $5/bag)

4 liters of Pacific brand, organic French onion soup

4 large, organic fennel bulbs, soaked, washed, trimmed so it resembles a white onion, two outer layers peeled, then finely-sliced

2 pounds USDA certified organic, pasteurized, triple-cream brie cheese, rinds removed, thickly-sliced, for topping the casserole, from U.S. grass-fed cows only

8 cups Anejo cheese, organic, pasteurized, finely-grated (from grass-fed cows only)

1/2 cup organic red peppercorns, coarsely-ground

4 TBL sea salt, finely-ground, organic
(This depends upon the cheeses' saltiness).

Directions:

1. Preheat the oven to 375°F, with the center rack.

2. Mix all ingredients together and top with the sliced brie cheese.

3. Cover with foil.

4. For a glass bakeware, deep-dish, extra-large lasagna pan, on center rack, this cooks for 1 and a half hours.

***It can also be baked inside of small, de-seeded, organic, heritage pumpkins, with the natural tops on as lids. Soak and triple-rinse the pumpkins, prior to cutting out the tops and de-seeding them.***
