Irish Phrases & Low-Calorie Casseroles

Recipe for a updating a casserole:

Replace the heavy, artery-clogging crust toppings with spaghetti squash, spices, and wheat germ.

Switch to fat-free cottage cheese, blended with 2% Velveeta.

Add mandolin-sliced, zucchini instead of pasta/noodles.

Replace the oil with fat-free broths/sauces/soups/evaporated, fat-free tinned milk (unsweetened).

Boil all meat and drain prior to adding to the casseroles. For St. Paddy's Day, boiled dinner (New England style) can be turned into a casserole, or mini pot pies, with the silicone/ non-stick, cupcake bakeware pan.

For the topping, instead of crust:

Use a pastry pipe and bag.

Add mashed butternut squash with Herbes de Provence, Greek, non-fat, plain yogurt, fat-free cottage cheese, low-fat, Ricotta cheese, and fresh chives, minced.
