Grilled Panini, Prosciutto & Triple-Cream Brie Sandwiches

Here's a quick-grilled panini sandwich  fundraiser recipe for the Denver Dumb Friends League (for the homeless dogs, cats) in Denver:

Get freshly-baked, panini bread rolls, pre-cut for sandwiches. Open each roll, and smear inside: 4 TBL on one side with truffle oil/goose liver pate recipe from Jellyfish Salad blog post.

Put inside each sandwich:

4 - 7 slices organic, heritage, Berkshire pork prosciutto, locally-raised

2 - 4 large, thick slices of organic, pasteurized, triple-cream brie cheese, cows' milk-based

5 - 7 large, organic, sweet basil leaves, fresh, pre-soaked, pre-washed, all stems removed

1/3 cup drained, organic, baby artichoke hearts in oil, chopped into 1/2-inch pieces

Directions:

1. Brush the sandwiches with organic, extra-virgin olive oil on the outsides, both sides.

2. Then sprinkle each side with organic, coarsely-ground, dried rosemary herbs.

3. Grill the sandwiches on medium-low heat, for approximately 2 minutes per side.
