Jamaican Pork Roast with Crackling: PTA Fundraiser Recipe

For a PTA fundraiser party of twelve adults, please consider a Cuban-style, portable cooking oven, purchased from a first-generation, immigrant, Cuban grandmother, whose homeless, neglected, and abused by her caregivers in a state-funded, nursing facility.

Roast Pork Loin with Crackling Recipe:

4 qty of five-pound pork loins, with skin on, organic, heritage, Berkshire pork, locally-raised by Cuban grandmothers
(Fresh/thawed, skins shaved with a new, pink, reusable, 4-blade, Quattro, safety razor, donated by Ms. magazine executives)

Marinate 24-hours, refrigerated, with a boiled, then well-cooled, brining solution:

1 qty of two-liter, Mexican, coconut soda, fairwage from Mexican grandmothers

1/4 bottle of Jamaican, Walkerswood, Spicy Jamaican Jerk seasoning, fairwage, and owned by GLBT military, female, minority veterans

Sea salt, and pepper to taste
(2 cups, finely-ground, organic, one cup of each ingredient)

Directions:

Wrap each pork loin, marinated in large, fresh, organic, banana/ti leaves. Put them into the Cuban portable oven, and plan for them to be finished cooking, at least one hour prior to the event start time. This way, none of the guests can get accidentally burned, because you'll be able to safely cool, clean and put the portable oven away. We need the governor to acquire federal funding for bilingual firefighters to visit the poorest schools in every state, to help us practice an ESL grease fire drill, once a year. This will help us to remember how to do it correctly.
