Downeast Maine Spiced Eggnog

1 gallon of melted, organic French vanilla bean gelato, pasteurized, reduced-fat, sugar-free, stevia-sweetened

(Melt this on the stovetop, in a pot, or in the microwave/steamer)

1/4 cup organic nutmeg, freshly-grated, and finely-grated

1/2 cup organic cardamom powder

1 cup organic cinnamon powder

2 cups organic vanilla beans, pureed (freshly)

1 cup organic ginger root, soaked, washed, peeled, then pureed

5 cups fair-wage, spiced, light-colored Jamaican rum, with the alcohol cooked off of it, by simmering it on medium heat, for 25 minutes with all the spices, in case there's any bacteria in them (including the pureed spices)
