Organic Plantain & Fig Spiced Chutney

Recipe for 6 cups:

2 pounds organic, slightly green, plantains, peeled, ends trimmed off, diced into 1/2-inch pieces

4 cups organic, apple cider vinegar

2 large, organic, Maui/Vidalia sweet onions, ends trimmed off, three outer layers removed, washed, then diced into 1/4-inch pieces

1 cup organic, pumpkin pie spice blend

2 cups organic, fresh figs, from California, soaked, washed, then diced into 1/4-inch pieces

4 tsp organic sea salt, finely-ground

2 cups organic stevia powder

2 cups organic, food-grade, natural vitamin E oil

Directions:

Put everything into a crockpot on high heat, covered for 1 hour. Stir it every twenty minutes. You may need to add a bit of Simply OJ orange juice to it, if it gets too thick.
