Downeast Maine Carob Ganache Iced Mini-Bundt Cakes

Icing for double-yolked pound cakes or double-yolked mini-bundt cakes. A store-bought flour spray onto the mini-bundt cake silicone molds will help to get them out in good shape also.

Use double-yolked eggs from a small chicken farm in the Harper's Ferry, West Virginia area for this recipe. Harper's Ferry is also a beautiful place to hike, stay at a small, family-owned bed and breakfast or go hang-gliding.

You'll often see grandparents holding hands and taking a leisurely stroll, or small farms that take pride in all of their children's health and well-being.

The people of West Virginia are the epitome of a small town, Main Street American hospitality unrivaled by the Aloha spirit of Hawaii. In only one day at Harper's Ferry, you can appreciate the healing things in life which truly matter. And they're not store-bought, or Madison Avenue illusions.

There's so much wisdom, grace, resilience and renewal of spirit in the people there that epitomizes the strength of American can-do optimism. It truly anchors my spirit even now, to have visited Haper's Ferry, even if just once in my life.

Carob Ganache Icing:

36 ounces carob chips

12 TBL organic brown rice bran oil butter substitute

3 cups organic, non-fat, evaporated, condensed, milk, unsweetened, pasteurized

2 cups organic, pasteurized, non-fat, chocolate/carob yogurt

Directions:

Whisk over medium heat in a sauce pan until melted. You can also use a double-boiler or a stainess steel mixing bowl over a pot of boiling water for this.

Spiced Eggnog Mini-Bundt Cake Ingredients

3 cups organic chestnut flour

1/2 tsp salt

1 tsp baking soda

3 tsp organic pumpkin pie spice blend

1/4 cup organic ginger root puree

1 cup organic, brown rice bran oil butter substitute, warm, but not melted

1 cup organic stevia powder

1 large, fresh, organic, heritage chicken egg, double-yolked, from Harper's Ferry, West Virginia area, Irish-buttered (see previous blog posting recipe)

1 cup organic, Mexican vanilla bean syrup, stevia-sweetened, fair-wage

1 cup organic, pasteurized eggnog, skim
