Rondon Coconut Fish Stew Ingredients:

5 liters coconut milk, reduced fat, organic
2 smoked ham hocks, free-range, organic
1 large, red snapper, cleaned, fillet, 2" cubed
1/2 cup ginger root puree
1 habanero pepper, minced, organic
5 tsp Jamaican curry powder, organic, spicy, unsalted, last recipe at the bottom of this link

10 large red shallots, organic, diced
3 white sweet potatoes, small, skinned, cubed
3 large green plantains, peeled, sliced, organic
2 yuca, peeled, washed and cubed
4 cups giant sea scallops & escargot/snails
2 bunches fresh cilantro, leaves only, chopped
8 cups carimanolas (dumplings, stuffed with snails/escargot, whole-belly clams & sea urchins)
Salt & pepper to taste
Clam broth, to taste (5 - 10 cups)
