Leftover Christmas Turkey Salad

Mix finely-chopped brussel sprouts with angel-hair shredded carrots, chopped baby bok choy, fresh cilantro leaves, chopped, with organic chia seeds. English cucumber, peeled, finely- and vertically sliced will add crunch. Add a dark sesame oil, tamari sauce, black pepper, garlic powder, and rice wine vinegar dressing to the mixture. Use any leftover holiday turkey, chopped, for the salad also.

***Any other leftover turkey can be used for an Indian curry masala stew, with peeled, de-seeded, cubed, butternut squash/acorn squash.***

Brussel sprouts have nutritious levels of indole-3-carbinol, vitamin K, and C, but if eaten excessively can interfere with (heart condition) anticoagulant medications, due to the blood clotting effects of vitamin K.

***Cut fresh brussel sprouts off the stem, clean
them (soaking, rinsing), then slice a cross into each stem for even cooking. Grill them, and serve with a reduced-fat, lemon-butter/lemon aioli, or a Hollandaise sauce.***

***Warm salads, casseroles, stir-fries, and kimchee are other ways of preparing brussel sprouts.***
