Preparing Lemongrass, Rosemary, or Sugarcane Grill Skewers

Soaked, washed, organic lemongrass:

Wash, score with a sharp paring knife tip all the way down, then peel off the outer layer skin. Then cut to desired lengths and widths

Soaked, washed, organic, sugarcane:

For fresh sugarcane, peel outer skin like a ginger root (vegetable peeler), then cut to desired lengths and widths.

Soaked, washed, organic, rosemary:

First, cut each into toothpick-lengths. Then, remove 1/3 of each stalk's rosemary leaves/needles. Sharpen the leafless stalks' bottom points into spears with a small paring knife tip.

***Giant sea scallops, halloumi cheese cubes or any traditional fritters (made from donated/ soup kitchen tuna like mini-crab cakes) can be grilled onto these natural skewers to make it look more decorative for the orphans.  For the diabetic orphans, wrap a large, fresh, organic, washed, Italian basil leaf around each mini-tuna fritter and use a low glycemic load bread crumb. Then skewer each fritter onto rosemary stalk skewers.

Comfort food can also be a morale booster to help them cope with tragedies, homelessness or poverty. They may likely have food insecurity issues to work through.***
