Potluck Mushroom & Bison Meatloaf

This recipe makes about four meat loaves. It can be baked inside of organic, red, yellow and orange bell peppers, to make it look more festive, for children.

4 pounds organic buffalo/bison meat, fresh/thawed

4 TBL organic, extra-virgin olive oil

4 cups organic baby bella mushrooms, washed, bottom stems trimmed 1/4-inch off, then, diced into 1/4-inch pieces

5 large, organic eggs (heritage chickens), beaten up

1 large, organic sweet onion, Maui/Vidalia, diced into 1/4-inch pieces

2 cups organic, whole-grain, breadcrumbs

1 cup organic, dark chia seeds

2 organic, red bell peppers, stems removed, de-seeded, diced into 1/4-inch pieces

2 cups organic, fresh, peeled, finely-shredded carrots

1/2 cup organic, dried, Italian oregano

1/3 cup organic, dried sweet basil leaves

1/4 cup organic, dried, French thyme leaves

1/4 cup organic, dried garlic powder

4 cups Newman's Own Sockarooni Spaghetti Sauce
