Sea-level, Compassionate Cacao Nibs & Rum Cupcakes with Chia Seeds

Sea-level, Chocolate Rum Cupcakes with Cacao Nibs, Mexican Vanilla, Fairwage Jamaican Rum & Chia Seeds:

(A modified version of Italian grappa cakes)

Ingredients:

1 and a half cups, plus 2 TBL organic chestnut flour

18 ounces of Mexican cacao nibs, organic, fairwage, freshly pureed, then, melted & blended with the butter

1 and 1/3 cup organic, dark chia seeds

2 sticks of pasteurized, unsalted, organic butter, from grass-fed only cows, melted with the cacao nibs

12 large, fresh, organic, locally-raised, heritage chicken eggs, from bird flu-resistant coops and roofed, screened pens
***Separate all egg yolks from egg whites.***

1 cup of organic stevia powder

1/3 cup plus 2 tsp organic, Mexican, fairwage vanilla syrup

1/3 cup Jamaican fair-wage rum, spiced

Directions:

Preheat the oven to 350°F, with center rack.

Whisk together:

Egg yolks, stevia powder, fairwage Jamaican rum, fairwage Mexican vanilla syrup, and pureed, melted, fairwage, Mexican cacao nibs (with the melted butter)

Then, gently add in the flour, mixing it gradually.

In a separate bowl, (mixer/handheld mixer), add all egg whites and a 1/2 tsp of finely-ground sea salt.

Mix on high for three minutes until frothy/whipped.

Combine a quarter of egg whites into chocolate batter. Then, gently fold in the rest of the ingredients (egg whites).

Mix on low speed for three minutes.

To bake:

Lightly mist a silicone, cupcake, bakeware pan with organic hazelnut oil. Put it onto a cookie sheet and spoon batter into each cupcake mold until each one is 3/4 full.

Bake approximately 15 - 20 minutes. Check center cupcake with a toothpick. It should come out cleanly, with no batter on it.

Use a stevia-sweetened, fairwage, organic, milk chocolate frosting with organic, pasteurized, grass-fed only, reduced-fat, buttermilk after cupcakes completely cool, for approximately 25 minutes. You can make your own frosting, using melted, organic, brown rice bran oil butter substitute, organic, stevia powder, non-fat, organic, milk powder or fat-free, organic, coconut cream powder, with organic, corn starch.
